Sarajevo is the most culturally layered city in the Balkans — a place where four religions have coexisted for centuries within a few hundred metres: the Baščaršija Ottoman bazaar, the Catholic Cathedral, the Orthodox church, and the Ashkenazi synagogue all share the same central district. The city's turbulent 20th century history — from the assassination of Archduke Franz Ferdinand in 1914 to the Siege of Sarajevo (1992–1996, the longest siege of a capital city in the history of modern warfare) — has left a city of extraordinary resilience and cultural depth. The new restaurant scene, led by Dva Ribara and Inat Kuća, serves Bosnian cuisine — cevapi, burek, and lamb cooked under a sač — that has no parallel in the region.
