Sarajevo is the most culturally layered city in the Balkans, a place where four religions have coexisted for centuries within a few hundred metres: the Baščaršija Ottoman bazaar, the Catholic Cathedral, the Orthodox church, and the Ashkenazi synagogue all share the same central district. The city's turbulent 20th century history, from the assassination of Archduke Franz Ferdinand in 1914 to the Siege of Sarajevo (1992-1996, the longest siege of a capital city in the history of modern warfare), has left a city of extraordinary resilience and cultural depth. The new restaurant scene, led by Dva Ribara and Inat Kuća, serves Bosnian cuisine, cevapi, burek, and lamb cooked under a sač, that has no parallel in the region.
